Avocado stuffed with Shrimp
by The Chef
Aguacates Rellenos            Serves: 2

Notes: The avocado is today the green gold and with it we are going to prepare some avocados stuffed with shrimp with a special touch.

Directions:
  • Start by peeling the avocado, as always we cut the avocados in half lengthwise and remove the avocado seed with the help of a knife. Empty the avocado using a spoon and reserve the peels.
  • Cut the avocado into small squares and add lemon juice to prevent it from oxidizing since in contact with air it turns very black.
  • Sauté the shrimp with a little salt and spices to taste.
  • In a bowl we mix all the chopped ingredients, the tomato, the shrimp, the onion along with the sauces. The amount of sauce will be to taste since it will depend on whether you like it stronger or not, what's more, even without sauce it will be delicious.
Ingredients:
1 avocado
  • 1 Lbs of peeled shrimp
  • Chives
  • 1 tablespoon Salsa Rosa sauce
  • 1 tablespoon mustard
  •  Lemon juice
  •  1 tomato
  •  Olive oil
  •  Salt

For the Salsa Rosa sauce:
  • 4 Oz mayonnaise
  • 1 tablespoon ketchup
  • ½ tablespoon Tabasco
  • Juice of half a lemon
  • 1 tablespoon Lea Perrins sauce
  • Salt
